Wednesday's Chow - Morning Glory Muffins

I found this little cookbook, TEXAS MORNING GLORY: Memorable Breakfast Recipes from Lone Star Bed and Breakfast Inns, a few years ago and just love it.  I make the Texas Ranger Baked Eggs all the time (find the recipe HERE).  I’ve included it in my Tex-Mex Cookbook Basket available through Friday, May 31st at the Brenda Novak Online Auction for Diabetes Research.  



For your enjoyment, here’s a recipe from The Iron Horse Inn, Grandbury, TX.

MORNING GLORY MUFFINS

Ingredients:

2 cups flour
1 ¼ cups sugar
2 tsps baking soda
2 tsps cinnamon powder
½ tsp salt
2 cups grated carrot
½ cup raisins
½ cup pecans (or other nuts)
½ cup shredded coconut
1 apple, peeled, cored and grated
3 eggs
1 cup vegetable oil
2 tsps vanilla extract

Directions:

Preheat oven 350°F. In a bowl, mix flour, sugar, baking soda, cinnamon and salt.  Stir in grated carrot, raisins, nuts, coconut and apple. 

In a separate bowl, beat eggs with oil and vanilla. Stir into flour mixture until, batter is just combined.


Spoon into well-greased muffin cups, filling to top.  Bake at 350°F for 20 minutes, or until toothpick inserted into the center doesn’t stick.  Makes 14 large muffins.
